Great start to the morning after a shocking sleep (last night was so hot inside, but too cold outside to open a window) - a cup of coffee and a long chat with Vickie in Vietnam! Left me wanting pho or a crusty baguette and some bacon. Thanks Vick :)

So instead for breakfast (which was kind of late) I had the usual grapefruit, and a cup of mango acai tea.
Lunch today was soup. Yawn. Although it is perfect soup weather, just wish I was making it myself. Red Pepper Black Bean by Campbells. In a box. Was actually alright. Had a muffin chaser ;)


EDIT: Also had a quick small salad for a snack cos I was starving. Lettuce, tomato, spring onion and some goats cheese.

Dinner is chicken & veg. Actually its chicken and veg for a couple of days, its defrosting right now on the bench. I think maybe tomorrow I might chuck it into a pasta instead, will see how we feel tomorrow.

Its definitely a gym week, planning on going every day. While being a house wife cooking and blogging sounds great, its very fatty work, and I need to get my lard-ass some exercise! I think literally rolling out of bed this morning bought it all home.

Grapefruit for breakfast today, and a coffee. First one in a couple of days so glad its not yet a habit... yet....

I took Lee to Moose Winooski's for lunch, naturally he loved it. So many sports to watch, so little time. I had the Buffalo Ranch Wrap and changed the side of chips for a caesar salad. Still pretty unhealthy, but I just felt like the crunchy greens. I am glad Lee liked it there, I think it will be grand in the summer, so definitely will revisit. Who wouldn't love a place with moose in the title??


Don't worry... It didn't come out looking like someone in the kitchen had a few bites before getting to me, I forgot to take the photo before I started hooking in.... haha!

For dinner we are having leftovers from last night, but with crusty bread instead of polenta. Something quick easy and tasty. Gotta use those leftovers, eh?

We have a boring week of food planned, but Lee gets paid again on Friday so might cook up sommat special on Friday or Saturday, we will see. Also its the Super Bowl on Sunday, so will head to the McGregor's and I am sure there will be some good food updates from there! Dreaming of the possibilities already....

EDIT: Blueberries are on sale atm, so I cooked a batch of muffins. They are definitely getting better!

January 29, 2011 - Beef 'burgundy' bourguignon

Ok ok, here we go. My first beef bourguignon ever, recipe a la Libby Wilke (my mum). Here are the ingredients:


Diced  beef
Plain  flour 
100g French shallot onions
100g button  mushrooms
1 tbs  tomato  paste
2  cloves  garlic  crushed
2  cups  red  wine
2  cups  beef  stock
Bouquet  garni  or  a  bay  leaf  plus  sprig  thyme  plus  handful  parsley
A  few  rashers  bacon  or  a  bit  of  smoked  pork  (eg  neck)

Toss  the  beef  (I used 600g of stewing beef) in  flour  and  brown a heavy pan in  oil.....small  amounts  at  a  time if cooking larger quantities. 


Remove, and brown  the  pork & onion. Chuck the beef back in. Add  the stock, wine, tomato paste, garlic and bouquet garni.  Cook on very low temp for 2.5 hours (either in the oven or on the stove if you have a heavy casserole dish with a lid).


Now I varied a little bit from mums recipe. I wanted to use pancetta instead of bacon or pork. A good cut of bacon is hard to come by here, its very very fatty business. But the only pancetta I found was in a massive slab smothered in pepper. So I got some lush thick cut proscuitto instead. Smelled divine.
I also forgot the parsley, typical! But I did remember the thyme & the bay leaf. I used a Bordeaux red for the wine, and probably too much because it was a smaller portion. Also, I added the mushrooms a little later, after about half an hour. I had to call mum to confirm the thickening process, it should do this upfront but I think I used too little flour and too much wine. So, upon amazing advice (thanks mum) I made up a flour/water paste to add to my bourguignon at the last minute after brining it to the boil. Worked a treat. 

Mum suggested serving this with a creamy polenta. Polenta is a difficult thing to get here, other than the raw corn meal. So I got that and put in one hell of an effort to get this going!

1 cup of corn meal
3 cups of beef stock
1 tbs butter
1 tbs cream cheese (will prob use sour cream next time, was rather cheesy!) 

It came together kind of like a risotto. It absorbed all the liquid, so I kept adding more until it was soft and... well... yummy! The beef stock was brilliant, really tied the whole meal together. Didn't add the butter or the cheese until last minute. I think this would be ON FIRE if I had used Gruyère cheese! Swiss much??


We paired this with a Pinot Noir from California (it was on sale) and it was brilliant. Absolutely superb meal. Take it from my best and closest critic:

Last night we had fun at McMullans for Julie's birthday bash, and had a blast. The menu is pretty extensive covering just about everything, but Lee and I decided to have a crack at the burger, our first burger in 2011. It was huge. I went with Swiss cheese and mushrooms, and it came with a mountain of chips of which I couldn't get through.


We are on the mission to find the ultimate burger, or as we call it, the Marshall Burger, because of Marshall on How I Met Your Mother. And while this burger was pretty good, it wasn't a Marshall Burger. The search continues...

Today we skipped breakfast due to a sleep in, and thinking maybe subway for lunch. Not sure yet. We have to do the grocery shopping and then I will crack into the beef bourguignon. Update to come soon....

EDIT: We did have subway and neither of us could finish it. I had a flatbread chicken breast with pickles, bell peppers, onion, tomato & lettuce, and added my own ranch dressing at home. After supermarket shopping today we got a Timmy's donut - maple glaze. Bad habits much??

Slept in a little bit (sorry Lee), having my breakfast now, so its kind of like an early lunch.
Woke up wanting eggs, so threw together an omelet, and voila, I get my eggs! This one has zucchini, red and yellow capsicum and some red onion. It is definitely lacking in the meat arena, some chorizo would have been brilliant but alas, none in the fridge. It was actually a bit too much food, I didn't finish it. 


Will probably have a salad and a yogurt later on, I am tipping I will get hungry again later this afternoon. Grocery shopping this weekend, thankfully! Time to restock. (EDIT: I didn't go the salad, had a soup instead, and an apple)

I am thinking I might make the boeuf bourguignon tomorrow night anyway, as Lee is really keen and I want to have a crack at my mums recipe. Actually, I think I might have a 'bourguignon-off' and compare some recipes. I have another recipe in my French cookbook but it varies a bit to my mum's and the pic looks like its rather liquidy. Plus I hear Julia Child's recipe is a must, so I will probably have a crack at that too. Not all at once, I am thinking this will need to be done over time, haha! But its winter so the weather is ripe for this kind of food challenge. 

We are heading out tonight for a friends birthday so will probably eat out too. Its just at a local pub so we will catch the bus, which we haven't done here yet. I hope its not a 'kebab on the bus on the way home' kind of night!

So for dinner last night we ordered take away, from Spring Rolls again. I had a Thai soup with prawns, and some dumplings. Was delicious, I am always in the mood for dumplings.

This morning for breakfast I had two slices of toast with peanut butter. I was a bit tired, woke up at 4am with a growling belly and didn't go back to sleep.

I had visitors for lunch today! Hooray for Krista coming over and bringing Elliot, who rolled over for the first time on our floor! Was too cute.
I cooked us up some maple bbq salmon (though this time it tasted more tandoori but still tasty) and a salad. There was an incident with my salmon fillet so no pictures... lets just say whoever filleted that fish did a bad job and left something that should have been removed. Gross! I served it with a salad of lettuce, tomato, yellow capsicum, celery and olives with some goats cheese. I went with the ranch dressing, I think I am addicted.


We topped it off with a yogurt. It was really nice to have some company for lunch for a change, next time I might cook up something a little more carb heavy...

Tonight we are having sausages in bread. Its just what we feel like. Pics of that to come!

Shame on me.

Firstly, Happy Australia Day. I started this morning skipping breakfast, and eating lunch at 12:30. Left overs from last night. And then a muffin. Shame on me.

My original plan was to make lamingtons, ANZAC biscuits and to go out and enjoy the day with some friends. There was even talk of a party at ours, which would have involved Violet Crumble, Aussie burgers and VB (only choice of Aussie beer at the LCBO). Instead it all fizzled, Lee picked me up after my interview and we went for a pint of Rickard's Red, followed by another and a side of sweet potato fries (first fries/chips of this year folks).

Despite my lack of eating today, I am not hungry, neither is Lee. So who knows what dinner will be, probably something else to bring on the shame files. Someone call Derryn Hinch!

January 25, 2011 - Dinner redemption!

Last nights disappointing dinner left me feeling naff.  I wasn't feeling tonights dinner, but I am glad I went through with it, because it was sensational. Total Dinner Redemption!

Tonight we had roasted pork loin in a smoky chipotle marinade, green beans and a salad of lettuce, tomatoes, yellow capsicums, goats cheese and sunflower seeds.  Delicious. We now have the meat sweats.


Also, I ate another muffin, and Lee bought home some Aero balls... whoops....

EDIT: Top that off with an apple, and baked beans on a slice of toast. Good night!

Late breakfast of grapefruit & ryvita, followed by a muffin.  Couldn't get out of bed, have that truck hitting feeling going on, again.
Was pretty hungry last night after our disappointing meal. It had potential but just didn't do it for us, too heavy. We didn't actually eat much, felt like crap for about an hour and then got hungry again. At least documenting all this helps identify what foods satisfies us and makes us feel good and what has does the total opposite.

Lunch was broccoli soup. Will probably snack later this afternoon, might get myself a yogurt right now actually...

For dinner tonight, we have pork loin marinated in smoky chipotle, with veg and salad.

For those who wanted to post a comment here but couldn't, I have found the problem and fixed it. So go nuts!

January 24 - Baking

This afternoon I whipped up a batch of muffins. I am messing with some muffin recipes, as I have to date not made decent muffins. I used to use a recipe from one of my fav cook books, Marie Claire, Kitchen, and they just fail every single time. This time I am using a mish mash of recipes from Butter Sugar Flour which Lee gave me years ago (this book also has recipes for lamingtons and anzac biscuits, so handy to have when abroad!). This batch is banana & butterscotch choc chip. Maybe not the healthiest but its true, if you want to make better muffins, make them unhealthy! They really are delicious! But I still feel like I am missing something. Will keep trying... Baking doesn't come as naturally to me as roasting or any savory cooking does. Gotta keep at it I guess. If you have any failsafe hints or recipes, feel free to send 'em my way!


Dinner is chicken thigh fillets stuffed with spinach & goats cheese wrapped in bacon, served with some roasted veg & rice.

EDIT: Dinner was average, it had potential but the bacon should have been parma ham, and was too fatty. Wont make that again.
I have since eaten an apple, a handful of almonds and about to take on a baked bean sandwich.

Right, so after we left yesterday, we went out for lunch and had Boston Pizza which was rather yum. I had a small pepperoni & feta thin crust pizza.
For dinner after the hockey we had our left over take out from Friday night. This was a bit naughty as it was 10pm when we ate. Whoops.

Breakfast this morning was peanut butter on ryvitas. Couldn't face the grapefruit, I have cracked lips and it would have been too painful.
Lunch for me was leftovers from Saturday. Had a salad with some left over potatoes, lamb and some beans. Chucked it all into a bowl, added some ranch dressing, and voila. My improv lunch. Delicious! Topped it off with a yogurt with some crushed walnuts.

Going to try to get some cooking done this afternoon for lunches & snacks. And of course for dinner. I think I am going to stuff the thigh fillets, it's a bit unoriginal but I have to work with what is available, and I am sure it will still be tasty.

BAU. Grapefruit was pretty sour this morning!

Snacking on a yogurt with walnuts right now, and just ate a banana. We are aiming for a late lunch because we are going to the hockey tonight, not sure when we will get the chance to eat. So lunch will probably be out somewhere.

I have some chicken thighs in the fridge that I need to use in the next few days, not sure what to do with them. I was going to stuff them but not sure, as I do stuff chicken a lot! Any suggestions?

Two swimming ducks, today is the 22 January.

This morning we had one slice of peanut butter on toast and half a grapefruit each.

We ventured out today, we had loads to do, including the grocery shop for the dinner tonight. We had food court chicken pitas for lunch then braved the supermarket.
All I can say is STUFFED if you can find lamb here! We had to try butchers and meat shops, and a butcher in The Healthy Butcher told us that there is a massive lamb shortage in Ontario and that the prices have jacked right up, and they wont stock lamb for another six weeks! I will definitely go back there though, it was an amazing store.
Anyway, we found a leg end fillet of lamb, so I adjusted the recipe to suit, mainly on guess work and a bit of research. The recipe is from I Know How to Cook which is a French cook book Lee bought for me a couple of  Christmases ago. And here it is:

100g unsmoked bacon
100g pork
1 handful flat leaf parsley
1 tbs Cognac
Salt & pepper
1-1.2kg shoulder of lamb, boned
50g butter
30g flour
400ml stock
Optional: potatoes or turnips

Now, here is where I vary from the recipe. I substituted the pork for pork mince, the Cognac for brandy (what is the difference other than region, really??), I couldn't find the lamb as mentioned so used a leg end fillet, which had a bone so I had to take that out and a fairly large amount of fat and sinew.  I also used less butter and more stock, and chose to add potatoes. Here is the method:

Finely chop the bacon, pork & parsley and mix together in a bowl with the Cognac. Season with salt and pepper. Have a sip of wine.


Lie the lamb out, rub with the stuffing, then roll up and use kitchen string to tie it together tightly. Have another sip of wine. Stringing a piece of meat can be frustrating, so additional sips may be needed.


Melt the butter in a heavy base pan, brown the lamb all over, then remove and let sit aside. Optional sip of wine.


Add 30g of flour gradually, stirring constantly, and then gradually add the stock while still stirring. Make sure your glass of wine is in reach because you cant stop stirring.

When its all combined, return your lamb to the pot, cover and simmer gently. For a big shoulder of lamb over 1kg it says to cook it for 2.5 hours, adding potatoes if you wish after 1.5 hours. Because I used a different cut of lamb which is also smaller, I reduced the cooking time to 1 hr 50min, and added the potatoes after half an hour.


I served with green beans and a salad. I had to adjust the cooking time of the lamb which meant my beans were cooked too soon, so I plunged them in cold water to stop them cooking any more, and then tossed them in a pan to reheat with some almonds & a little olive oil when I was ready.


Overall verdict? Delicious!
Would I recommend? Hell yes!
Would I make this again? Absolutely!

Findings?
- Was difficult to stuff such a small piece of meat. Definitely will work better with a shoulder piece, especially trying to string up a short fat bit of meat!
- When I added the first portion of flour, it was what I expected. When I added the second I panicked because it went really thick and lumpy. I smoothed it out, but think the heat may have been too high, so note to self, next time turn it down and maybe remove from heat when adding the flour.
- It is also a lot creamier than I thought it would be.
- To get a gentle simmer, I had to have the stove on medium heat. No idea why, but it wouldn't simmer under the 4 notch.
- I adjusted the timing and while the meat was pink it could have been more tender, so would prob change it to 1hr 40 mins cooking time, and chuck the spuds in sooner.
- French cooking is not for the weak hearted or for someone on a diet. They are so skinny because they eat very little, so be mindful of portion size when serving up an artery hardener!

Mmmm

For pay day dinner we decided to get take away. We ordered from Spring Rolls - I ordered the Ho Fun Satay, a flat rice noodle stirfried with chilli, pineapple and roasted peanuts. Lee ordered satay pad thai. What can I say, we have our peanut hats on tonight. And they gave us free spring rolls!

And... we have a confession to make. After 3 weeks of no drinking, Lee starting work and getting paid has given us reason to celebrate... and we broke our detox. Having a lovely Heineken as I type this, and a tear in my eye. Yes, we broke detox, yes,  we were meant to go for 4 weeks, but we don't even feel guilty. So its true, we do reward eat and drink. Hooray for beer! :D

Breakfast this morning was peanut butter on toast. It is a bread day because we are out of ryvitas.
Lunch was a leftover roast beef and tartare sanga. Lee has trundled off to work with one himself. It was ok, pretty tasty for leftovers actually and its great to not waste food.

Not sure what dinner is tonight, its pay day, the first of many (and the first in a LONG time) so we might celebrate. Without alcohol. Today is 3 weeks into detox, and being pay day, so its a bit trying on our willpower!

Thanks for the votes to those who voted, much appreciated! Looks like the lamb came out as the winner, although there are 4 hours left to vote (I doubt it will change). I will do the grocery shopping tomorrow and write all about it tomorrow night.

Last nights dinner was win. We ate early (one of the best things about leftovers) and the turkey burgers were tastier than the first night, but a bit overcooked. Still, was a good dinner.
We both got peckish after 9pm though (one of the worst things about early dinners), so I ate another yogurt.

Back on the grapefruit this morning, with a dry ryvita. And a coffee.

Lunch was broccoli soup. Was delicious! I added a dollop of light sour cream and threw on some pumpkin seeds. Mmmmm. Suits the weather too, its freezing in here today. And it kept me going until dinner.


Tonight's dinner was roast beef with sweet potato mash, green beans and salad. I am absolutely gutted because my meat thermometer has crapped itself. I think it 'may' have spend some time soaking when it shouldn't have, so its giving inaccurate readings. Might need to fork out another $12 for a new one, and treat her better. Either way, I had this hunk of beef in the oven on 350F for 30 mins, then upped it to 400 for 15. It came out delightfully pink and juicy. I should have let it rest a bit longer but who doesn't like a bit of blood on the plate to soak into the mash??


Only one day left to vote for what I have to cook on Saturday night, if you haven't done so already please do as its currently a tie between bourguignon and stroganoff. Someone please tip it!

The REAL January 19th, not like yesterdays fake January 19th.

Breakfast was 'healthy slice'. Not enough food though so gotta start eating more in the morning, I was starving by lunch!
Lunch was chicken salad on ryvitas (below). It's amazing how far you can stretch one chicken fillet, there is enough for lunch again tomorrow, although I will probably send it in with Lee, as I am poultried out.
It was difficult to eat while watching CSI, as there was a scene with vomit that looked just like my lunch and they were sniffing samples of it. Nice.


Left over turkey burgers for dinner tonight, waste not want not, right? Tomorrow I am thinking soup and salad for lunch and roast beef for dinner. Plenty of time to think about it, but the beef is kind of cemented as it is already defrosting. I need to stop thinking so far ahead, I will run out of things to think about later on!

Also I think we need to buy more fruit. I have the biggest hankering for fresh apple, kiwi fruit and pineapple the last few days. We get loads of veg (some of which are actually fruit, but I don't like going in to that), so fruit is on our next shopping list.

January 18, 2011 - Turkey Burgers

Well, an eventful afternoon filled with tea, and maple cookies, I couldn't wait to get crackin' on the turkey burgers.

While I was in the interview from hell, I sent Lee to the supermarket to pick up additional supplies.

The turkey patties themselves contained soy sauce, oats & spring onion. I would normally chuck some chilli & citrus in there too but we don't have any (should have added that to the list). The buns are multigrain kaisers, I added some guac which was hard to make as the avocado was not quite ripe, and grilled up some pastrami to top it off with. Served with a side of coleslaw, with only a little carrot, not enough to get carrot rage over. Overall, delicious dinner. I vote for more pastrami next time!

Shamefully, only a banana muffin for breakfast. And a big mug of coffee. I am seeing a pattern and I think it might be one I need to sway before it becomes a problem.... Maybe when its time to have a beer again, the coffee will slow down. Now why does that sound ridiculous?!

About to have lunch, chicken salad on toast. Might chuck in some celery, capsicum, pickle and maybe pumpkin seeds.
 EDIT:  Yep, tasty lunch with a side salad bigger than the actual lunch. Chicken salad is amazingly easy and healthy, a tablespoon of light sour cream, a lot of veg to extend it, and it will feed four people. I  guess its chicken for lunch tomorrow for Lee and I too. Chicken overload. Time for a green jasmine tea.


Dinner is defrosting - turkey mince. I am thinking turkey pastrami burgers, especially in light of The history of Meatventures going public.

The idea of the vote is giving me new challenges to cook, eat and write about it. It's my first poll so hoping people humour me a little!

Will update dinner later on this evening... but before then, another special thanks to a condiment (no fridge is complete without hundreds of condiments to choose from) that has changed our lives. Our good friends the McGregor's introduced us to this sweet pickle relish. Its the shizzle. Load this up on any burger, use it as any filler, its the bomb.

Breakfast today was coffee, then around 9:30am I ate a banana muffin. I am glad they are small, but I swear I could pop those little puppies like maltesers! They are a little dry, I knew they would be as I didn't use butter and the mixture was pretty thick. I was contemplating thinning it with some brandy but being sober January I decided not to. Retox February is going to be a blast!

My lunch today is a combo of last nights left over salads. Then we will see. We have chicken again for dinner tonight, might stuff some zucchini as it has been a while. Will keep y'all posted as I am sure you are hanging on the edge of your seats to know what it is I will be eating.

I have also created a poll -----> over there (look right). Lee gets paid this Friday, our first pay day since May 2010, so we are dead excited and I would like to cook something other than our standard 'meat & veg' dinners. So feel free to sway the vote any way you like, I will include the recipe for the winning vote and write about my learnings from cooking it and naturally the results. I haven't actually cooked any of these, so there is another reason to have a crack.

EDIT: Dinner was delicious. Roasted chicken breast again, this time with zucchini stuffed with a little red onion, mushroom, beef summer sausage, egg and a tiny bit of cheese. The salad was cos lettuce with tomato, olives and almonds. Full as a goog!

January 16, 2011 - Baking and dinner

This afternoon I made some of what Lee calls 'healthy slice', a slice I used to make in the UK. I got the recipe from an old boss who's brother was some football coach, the idea of it is that its low GI, no fats, and no added sugar. It has oats, dried fruit, fresh apple, mashed banana, nuts, seeds and spices. I made it a bit thin, but it tastes ok. Next time more mixture.
I also made some banana & sultana muffins. There is a bit of sugar in those, haha. But dairy free so they have one thing going for them... Obviously we are having a banana overload in the de Souza household.



Dinner was chicken, beans & salad. I just love the salad bowl, its a bit depressing for only two people but really love it. Look at it! It was a Christmas present, our friends mum who gave us the mugs also gave us this bowl, its from the same... uh... Potter? Pottist? Pott... maker! The beans are technically a salad too, I love making this because its so easy and I love the flavour. Green beans are the bomb. Plus they are so pretty with the red onion & mustard seeds.



And for the final act, perhaps a cup of tea, and.... maybe a cookie!

BAU today.

We drove to Victoria Park in Kitchener this morning to mince around in the -13 degree weather. There was a bit of snow, and after half an hour we were happy to be back warming up our bums in the car with the seat heaters. Happy to drive around for a while, we stumbled on to Tim Hortons (of which there are many, almost like Starbucks in the US so stumbling just means driving our usual route home and ignoring the first three or four we see), and while we hate their coffee, we thought we would have a crack at the maple glazed donuts. Our justification was that we needed change to do our laundry. At least we didn't buy any of their terrible coffee, bleugh!  The donut was actually pretty good, but nothing special. It was my first donut in about 8 months, and while I know I shouldn't be eating it, stuff it, a girl's gotta live!


When we got home we needed some serious warming up, and pronto, so I figured grilled cheese would be a good start, with ham & mustard and some brewed coffee. I actually burnt the first lot as I did them closed and in a pan, but the bread stuck and it was a big ol' mess. So I grilled the second lot in the oven. Oh, and I also wanted to show you how orange the cheese is here, turn the lights out and this stuff will glow in the dark:


This afternoon will be filled with cooking and hopefully delicious smells to go with it. Tonight for dinner is chicken and veg and probably a salad.

In order of consumption:

Last night's dinner consisted of roasted chicken breast fillets with veg, thanks to Lee coming home with food and cooking me dinner! Nice.
He also found some chocolate on sale at the supermarket so we devoured a Hershey's cookies & cream bar. Whoops. Devoured puts it mildly too, it was destroyed, crumbs and all. Not even forensics from CSI would find traces of the tasty goodness.

This morning was BAU, here is a visual as these things are important, including the rogue seed on the plate.


We had a full day today, out and about, so we ended up treating ourselves to a lunch out at Kelsey's, and I gotta say, after 1.5 hours in the mall and tackling hungry people in the supermarket, it took everything we had to not order a pint. I had a tasty salad of popcorn shrimp (I know, I know, why have a salad if part of it is crumbed and deep fried), which is below. The seeds & feta really made this salad. Poor Lee had a disappointing lunch of some shrimp penne, it was tiny, liquidy, and well, average.


When we got home we had some 'chill the f@!% out' time, before shoveling our snowy icy driveway. I needed about 20 minutes rest after that, but then went on to prepare our dinner.
Tonight we had a stirfry pork noodle combo, of which I pan seared the pork loin with some garlic & seasoning before roasting it to its pinky perfection. Once again, I love love love my digital meat thermometer. The meat was so tender and tasty, it was lush. If we had company I would have presented it a little better and tidied up my plate, but it was just us and we were hungry, so forget that! Check out the slop marks!


Now, we are about to tuck into something for the shame files, Reese peanut butter cups. Well, the hockey is on, and we are sober, what do you expect?! A most excellent way to end a hectic active day.


Gary, this is for you. These are the pans I use for my frittatas. Any small good quality omelette  pan that is oven safe should do. These are old copper ones, and so easy - bake and flip. Done.

BAU, including the usual coffee.

I whipped up another baked frittata for lunch, as we had random ingredients. This one had ham, spinach, zucchini and red capsicum with three eggs. Thats it. Bake it on 420 (F) for 25 minutes and bam, one tasty frittata. I love these because of the little pans we have been given, they are so cute and easy and great for individual sizes. I also like that they are not fried, no oil or butter needed, and the veggies are still firm when they come out, not fried and oily. Such an easy satisfying thing to make, and they are so pretty. I would love to serve it with a simple salad of spinach leaves, maybe pecans & pear, some goats cheese, mmmm. But we went solo today, and when I say we, I mean me and my frittata.


I don't like to eat too many eggs per week, I usually stick to 2 for the week, one of which is usually used to make rissoles or something like that. But eggs are cheap, filling, and so versatile, that I am stretching this out. I wouldn't eat more than 4 a week at the moment though. At least my hair is nice and shiny.

Tonight we head to the supermarket, we have a couple of different meats in the freezer that need pairing, and we have a week's food to purchase on a low budget. Time to get creative. I might come back and do a bit of a poll to see what people think, but until then, its what's on sale! Until then, adios. Will confirm dinner when we know what it is...

Today was a good start to the day. Back on the grapefruit and I love it, I really do.

Lunch was whole wheat penne pasta with a beef and veg tomato sauce. Was pretty tasty, had what I thought was a rather large portion but ate it no worries (eating from a plate not a bowl always looks like loads but its just flat, I always forget that). I added a smidge of parmesan cheese, and voila. Lunch.


Actually, it will be my dinner too. Lee is working late and we are out of food so there you have it. It could be worse, at least we have something to eat.
EDIT: Yep, it was my dinner, but note to self.... tomato sauce may have been a good extender in uni days, but now its just revolting. Had a few bites of Lee's sub when he got home, and we polished off another violet crumble between us. Living on the edge...

I am really looking forward to having an income. Being able to be creative with food and trying new things, plus being able to buy healthier produce is what I need. It can be hard to be motivated & focused to eat well without a good budget, its hard to be motivated to do anything without a good budget! Alas this will change, so I will stop feeling sorry for myself and start planning...  Over a mug of green jasmine tea mmmmmm!

The auto timer on the coffee machine got me up nice and early today, and Lee came in with his leftover toast which I consumed and was enough to get me through to lunch.

For lunch I had bbq maple salmon and salad of raw broccoli, lettuce, red capsicum, alfalfa, pumpkin seeds and cucumber. I packed one up for Lee to take in to work with him also (although is had almonds instead of pumpkin seeds).



It was... ok. I feel a little bit disappointed, but not much I can do about that. Hope its ok for Lee. Especially after the vending machine stole his money when he went to buy a bottle of water! Might have a slice of left over pizza...

EDIT: I did eat a slice of pizza, and then a slice of bread with nutella on it, and still not feeling satisfied but definitely feeling crummy.

Tonight's dinner is leftovers - rissoles, salad, edamame, maybe not the last of the pizza, there is some meat sauce defrosting from last time I made pasta, so that should get us through tonight and lunch tomorrow. Next stop, supermarket!

SECOND EDIT: Add violet crumble and a guilty conscience to the list. Will do better tomorrow and the rest of this week and next week.

Breakfast today was two ryvitas with natural peanut butter. The house was filled with the smell of brewing hazelnut coffee so I woke up with Lee and saw him off to work. And then enjoyed the coffee. Mmmmm.

A new friend had the day off and asked if I wanted to go for lunch, so she came to pick me up and Mr Mastercard shouted me lunch at Moose Winooskis, and with a name like that, how can you say no??
I had the mango spinach salad with chicken, it also had strawberries, egg and pecans and was served with a raspberry vinegarette. The pic is pretty average, mainly because they were giving me shit for taking photos of my food, but here it is anyway just so you can visualize (very important):


As you can see, there is a bit of the chicken and a bit of egg missing, I started and realised I had forgotten the photo! Anyway, was a good salad, but not sure the chicken was worth the extra $4. Good to have fresh fruit though, not the tinned stuff.
I liked the place too, and will take Lee back when we have money and when we can enjoy a beer. The sports bar section is pretty cool and I hear they have awesome patio parties in the summer.

And for dinner... well... we are cheating a bit. We have ordered a pizza. Mr Mastercard coping a beating today but at least its cheap! I know, pizza again is a but much but its a different place, and well, we just feel like it, thats it... As a wise drunk woman once said in Las Vegas: 'DONT YOU JUDGE ME!' Ah good times.

Firstly... HAPPY BIRTHDAY DAD! Even though I know you wont be reading this, I am thinking of you from the other side of the planet. Below is a pic mum sent me of my nephew Christopher having a cooking lesson:

Dad's birthday cake was apparently an orange cake (not sure if its her famous orange & poppyseed one or not) with lemon icing. Man, I miss my mum's cooking. It's my mum's cooking that prompted me do my cooking course. We had to fill out a 'why are you doing this course' questionnaire and I wrote 'to one up my mum' which is yet to happen.

Breakfast today was (shame on me) in bed! I had all-bran with added ground flaxseed and chopped walnuts with skinny lactose free milk.

There wasn't any snacking until lunch, which was a pita pizza with tomato, zucchini, salami & feta cheese. Loaded it with hot sauce, it was all good. And it kept me going until dinner.

Dinner was baked rissoles, and even though we said it was a hamburger free month, we made them into hamburgers. Oh the shame! The rissoles are made of minced beef, grated zucchini, oats, chopped almonds, egg, Italian herb seasoning, a smidge of chicken salt and this time I tried something new, grated onion. I usually chop the onion, but I saw Rachael Ray grate onion directly into her burgers and I cannot believe I never tried this before, it never occurred to me!
We went with just rissoles because neither of us were overly hungry and I am missing ingredients for the stuffed zucchini, and salad is just going in to the burger anyway.... Self justifying is truly an amazing thing. We used a wholegrain bread, it's just so damn tasty, so why not eh? So much for my wheat free dairy free year....



And that's it, that was my day of eating. I would just like to thank Frank's Hot Sauce for his contribution to my meals today. You rock Frank, and worth every bit of the $5 a bottle you cost us. xxx

EDIT: This is for the shame files, was craving something sweet and the only sweet thing in the house were the butterscotch chocolate buds used for the gingerbread men buttons. So, a handful of those later and a tooth ache, craving satisfied....

After a terrible diet yesterday, I dug myself out of my self pity pit and decided to start today differently, or should I say, the same. After my post yesterday I had a snack of yogurt (check out the size of it, it seriously is a snack). And then, finally enjoyed my first night with our new bed, and it was lush.






Woke up feeling almost new this morning, so decided on my BAU. The grapefruit stung the crack in my lips but apart from that it was exactly what I wanted. 


We head to Ikea today and I couldn't face the queue to the Ikea restaurant, or the food, so we stopped at Subway and I had a chicken flatbread with lettuce, tomatoes, onion and pickles with ranch dressing (shame on me). 
What I wanted and what we had were two different things, I would have much preferred a Swiss picnic, not unlike the last one Lee and I had near Le Châble on one of our walks from my sisters house in Vollèges:




It was at this picnic where my profile pic came from, that is my hand, and my sandwich. But alas its Sober January, so Subway it was. 


Right now we are sitting in our new bed messing around on our laptops drinking hazelnut coffee which I am sure we will regret later tonight when we try to get some z's, but for now we are comfortable. I have beef mince to try to be creative with for dinner. I was thinking rissoles with stuffed zucchini and some salad. Not really hungry right now so it could go either way.


Well, thats it for now. Tomorrow Lee starts work so it begins, we will be eating separately once again. We have eaten nearly every meal together in the last 8 months, and I have to say, he is the best person I know to eat with. Will be a bit strange but I am sure I will get over it. My cold is passing, and energy levels rising, so a warning to 'this week', look out, I am gonna bulldoze you!


EDIT: No energy or hunger levels high enough for dinner, so we had baked beans on toast with an egg. Nice.

After a terrible sleep I crawled out of bed this morning and wished I had been more organised with our food plan for today from yesterday. 
I started today with a 6:30am feed of left over cannelloni.
I was uninspired by food today, my care factor was approaching zero and my motivation was well in to the negatives. 
We had a voucher for Boston Pizza so went for pizza for lunch, it was ok. Bought the left overs home, ate that for dinner. And that is my food blog for today, that is all I have eaten. Eeesh. My heart isn't in it today, so hopefully tomorrow I will be more inspired to eat well, and be more motivated in the kitchen.

Woke up from our last night on the airbed this morning with no desire to eat. The aftermath of this cold is like having a cold all over again, but feeling better and worse at the same time (more energy, but coughing etc).
I braved a late breakfast of all-bran flakes with lactose free milk, with some added ground flaxseed and some walnuts. Yummo. And naturally, a black hazelnut coffee. Canada has already changed me...


Lunch was ham steaks with a crushed pineapple sauce and left over salad from last night. Nothing special but hit the spot either way.


Tonight we are kid sitting at the McGregor's, I made a chicken cannelloni with enough left over for some late night home comers with post Christmas party munchies. It was ok, lacked a bit of flavour I reckon but Lee liked it. Gotta love a man that is easy to please when it comes to food! I loaded mine with hot sauce so it hit the spot.


No idea what is on the menu for tomorrow....

January 6, 2011 - Dinner

Ok ok. I started dinner early today because I was going stir crazy with cabin fever. 

Tonight we had stuffed pork loin with roasted sweet potato, zucchini and an onion, and a salad of lettuce, tomatoes, olives & pumpkin seeds, with a sprinkle of feta. 
The stuffing I made with dried apricots and sultanas soaked in some chicken stock & rosemary, I added some walnuts and a teaspoon of cinnamon. 
Once again I overstuffed the pork and didn't have any strong cooking string so it was difficult roll, and then to cut. Still, it was really good, and would definitely cook this again. I was hoping it would have some juices to make a sauce with but there wasn't any. The meat was so tender though it didn't really need it, but would have been nice.


Speaking of overstuffed, I couldn't possibly fit another thing in. Good night y'all!

So salmon for dinner last night was a treat. The fillets had a maple bbq seasoning rubbed on 'em, and they were absolutely delicious. And I have to say, the meat thermometre my good friend Krista pimped on to me was a purchase that was well worth it. If you don't have one, get one. I seriously don't know how I went so long without one, our last three weeks together have been fantastic.
With the salmon we had asparagus which are cheap at the moment so I roasted them up (I usually roast them in balsamic but we don't have any yet), and I made a caesar salad but instead of bacon I used ham, and instead of croutons I used raw sunflower seeds, for the crunch. It actually came off really well.




I was snacky later though, so cracked into a yoghurt with some walnuts. Still hungry, I resorted to 10pm toast. I think I should have bulked up dinner a bit more...


I skipped breakfast today, woke up feeling like I was hit by a truck. We then did a top up supermarket trip, and had a pita for lunch with spicy hummus, alfalfa, avocado, summer beef sausage and lettuce with a bit of mayo. It was actually really tasty but think I should have warmed the pitas before loading them up as they were a bit difficult to eat (couldn't really wrap the sides up like a hot dog as the pitas split). 




Tonight we are having roasted stuffed pork loin, as pork is also on the cheap at the moment. So will update that later.  For now, a big mug of green mint tea.

I can confirm we had the frittata for dinner last night, which contained zucchini, asparagus, spring onion, sweet potato and a bit of parmesan cheese, and of course, egg. Was topped off with a tim tam and a cuppa. 

BAU (breakfast as usual) and for lunch we ventured out to Nougat, a little deli cafe that came recommended to us from a new friend here. I had a chicken, mango, brie and spinach toastie on thin seeded bread with a side salad. It was ok, sounds better than what it was but it still hit the spot. Lee had a turkey pannini but its still too soon from Christmas so I couldn't face it. Still, it was a cute little place with loads of produce, including breads, cakes & pastries, international confectionery and precooked meals to take home. Plus our lunch and a juice was cheaper than subway. Cant go wrong with that. 

Tonight is maple salmon fillets & veg. Thats about it. Might sneak in another cheeky tim tam... Once again, I am already planning lunch and dinner for tomorrow. I need a job, or a hobby, or just loads of money and amazing cookware to really get in to it!

Alright, until further notice or I say otherwise, just assume my breakfast is half a grapefruit and a ryvita (either dry or with natural peanut butter).... because thats what we had again today. And what I have had for breakfast nearly every day for about 4 years give or take, except for the last 8 months.


For lunch we had chicken & avocado salad with chunks of celery, spring onion & tomato on a pita bread. The pita was a bit dry so when we tried to stuff them it split, so we just ate it on top like a slice of toast. I added some alfalfa to mine, as well as some caesar salad dressing.




I still have a cold so when Lee went out to visit our good friends at Home Depot (never again), he bought back a little cheer up surprise... a packet of caramel Tim Tams! So I downed two of 'em before Lee could say 'these are for you' and thought I would make note for Katrina who thinks I am only eating healthy foods.






We have just snacked on left over hummus and crackers and dinner is shaping up to be asparagus and sweet potato frittata, whenever I can be bothered getting my butt into the kitchen. Might chuck some ham in there to meat it up a bit. I think meat and eggs go perfectly together, especially after our Mongolian adventures earlier in 2010.

Today started on the familiar note of half a grapefruit & a ryvita, this time with natural peanut butter. There is something about the peanut butter than fills us up, its only a smidge but we really feel the difference, and are not starving an hour later. And that hazelnut coffee is sooo good, I have it black no sugar, and its still drool worthy.

Lunch was chicken in pita with tzatziki, lettuce & onion and feta. For those who thinks this sounds like a souvlaki, it wasn't.  Well, not really. 

Dinner was pretty tasty, roasted chicken breast with italian herbs, steamed green beens tossed in prosciutto, onion and almonds, and a giant salad of tomato, cos lettuce, avocado, spring onion, alfalfa and raw sunflower seeds. Apparently alfalfa sprouts are meant to be toxic in large quantities, and I read somewhere that it can inhibit the immune system and cause other medical problems. Well, so can lots of other things we eat, and I love the stuff, so taking the chance anyway.



About to have a cup of green jasmine tea, and voila, the day has ended. This no drinking in January thing is easy so far, although we craved sugar a bit today. It has only been three days, two of which were sans hangover, so I think maybe during the next week we will start to feel it, both good (feeling more energetic, less bloated, sleeping better, etc) and bad (craving a glass of wine or a pint to wash down some tasty foods). We will see.


EDIT: Another night snack of hummus, this time with raw broccoli and some almonds. Also snuck in a few cheeky butterscotch chock buds previously used as buttons on the gingerbread men. Whoops...
