Last night's dinner had us full as a goog for the rest of the evening. Delicious. I didn't add a pic yesterday, so here's one now:


Breakfast today was the usual, grapefruit and ryvita. We rode into work (although at different times, Lee is back on shift and doing 7am to 7pm for the next week). Had a peanut butter muesli bar when I got to work. Haven't had them before but they are sickly sweet, not sure I will have another. Its ok for Lee, he has the metabolism of an ox. I am unfortunately not so lucky.

Lunch today was left over rissole and coleslaw. It was... well, ok.

Tonights dinner plans were touch and go. I cant believe I planned soup week around a humid heat wave. Still, after a call to my mum (I needed convincing) I made mushroom soup with a Mez Egg. The recipe says a poached egg, but we call them Mez Eggs, as you already know.  I used chanterelle mushrooms (the recipe just said dried mushrooms and my choices were slim, I really didn't want to use dried portabellas) and white button mushrooms, and threw on a few shreds of parmesan. Here is how it turned out:


I have to say, in spite of the heat and in spite of my laziness, this was an absolute treat. It was a joy to eat, and  we are glad we have more left over for dinner tomorrow night. Although I might have to have a salad too, tomorrow is going to be more humid than today....

Had a yogurt with some nuts for breakfast before heading out to finish off our weekend tasks.

Another productive yet thirsty day, its rather humid and starting to warm up a bit, so a pint in the sun with our lunch was in order. I had a chicken and mandarin asian salad which was awesome, loved the black sesame and poppy seed dressing, and we shared a side of sweet potato fries. Lunch looked like this:



Dinner is rissoles in thin buns (I call them slider buns but apparently sliders are the same thing but in miniature versions), with avocado and salad. Lee is on cooking duty, hoorah! We also have coleslaw left over, yummy yum yum.

May 29, 2011 - Get Your Bake On

Well, I said I would bake this weekend, and this is something I have been thinking about for some time.
Even though a Swiss roll isn't traditionally Swiss, I wanted to have a crack in lamington form, kind of like my two nationalities combined. Introducing.....'The Swammie Roll'.




Isn't she beautiful?! She is resting in the fridge for a bit, I think I went overboard on the cream which is unlike me, considering how much I don't like it. But I cant wait! I thought the jamming and the creaming would be the easy bit, with the rolling and the chocolate/coconuting being the hard bit. I was well off, and realised quickly that the jam and cream were bloody hard, mainly just having control of it. Hence it squishing out everywhere.  Still, if it looks too perfect, no one would believe I made it, so I am happy with her rough edges.

Had a ryvita with peanut butter for breakfast, and head out for a big day of pay day tasks.

We were still out by lunch so we went to Coras, we haven't been before and it came highly recommended. I found most of the menu to be something fatty covered in fruit. Like eggs benedict, or cheese omelets. There was one with a cheesy meaty omelet wrapped in a crape smothered in hollandaise. Loads of cream in the dishes too. I went a spinach omelet and requested half cheese, and skipped the bread. It came out with fried oily potatoes, and I dunno, it just didn't do it for me. The table near us had a fruit & meat planner smothered in whipped cream, made me feel ill. Anyway, never mind.

I found a new pair of shoes for work (two, actually) and we managed to get a lot done, but by the end we were tired of people, and our feet hurt so we went for a knock off beer. Mega beer, actually, it was huge. I know I am not writing a blog on what I drink, but I thought this was worthy to add:


I also ordered some sweet potato fries, and they were delicious.

Dinner was pork loin with apricots and a honey ginger glaze with some healthy slaw. Pork is finally back in the supermarkets so we got another one for the freezer. I have to say, it was bloody awesome.


Looking forward to some baking shenanigans tomorrow, and a bike ride. Lee is on shift again as of Monday so have some great recipes to try. I will be riding in to work every day so will try to get more creative than salads for lunches.

Even though last night's dinner was delicious and pretty filling, I got snacky later on. I have been really good with curbing the snacks but I couldn't do it last night, so had some rice crackers and hummus, then a late night half sandwich (hot salami and tomato sauce). Whoops.

Breakfast was the usual, and the grapefruit was much better than yesterday. I ate a banana when I got in to work.

Lunch was meant to left over salad but I didn't feel like manky salad and needed something a little more substantial so I went to the work cafe on the first floor. Not much selection, but I eyed off and decided on a turkey and brie focaccia. It was pretty good actually but a bit too substantial, the bread made me bloat right up instantly and my jeans got real tight real quick. Urgh!

It was a loooooong day so we met a friend at the pub before seeing Kung Fu Panda 2 at the moofies.  We had a bite to eat there, and I had a buffalo chicken wrap with salad (artichokes, cranberries, almonds, and something else I cant remember, with baby spinach). I upgraded the hot sauce in my wrap from extra hot to suicide, the next notch up. I figured how bad could it be? Well, lesson learned. I could only eat half of my wrap and my mouth was on fire. I went through my beer quicker than you can say 'man this is f$%@ing hot!
I took the other half with me, determined not to let the suicide hot sauce beat me.

No snacks at the cinema, came home and I went the other half of my chicken wrap. I finished it, but never again! I love spicy food and I love hot stuff thats a challenge, but this was ridiculous. I immediately had a small yogurt to help curb the burning, which kind of worked. To finish, I had a few rice crackers (also to help cope with the incineration of my tongue) and called it a night.

Overall, a pretty good day, albeit busy and uncomfortable! xxx

Last night I snacked on some pork I cooked up for todays lunch (and by snack I don't mean a meal, I had a few pieces as I was cutting it up, was rather fatty so didn't get much more than my lunch worth) and a few rice crackers.

Breakfast was the usual half a grapefruit. I had to chuck the first two out, as they were rotten, which makes me so mad. The one we ate was borderline I reckon. Glad I had the peanut butter ryvita to wash it down.

Mid morning I snacked on a vanilla yogurt.

Lunch was pork and salad, it was pretty good, and it looked like this:


Kind of like every other day eh? Just with pork. Pork was on the cheap last week, including ham, but this week the prices seem to have shot right up. We have been on a mission to find a plain pork fillet for under a tenner for a recipe I want to try but it will have to wait.

For dinner we had chicken breasts stuffed with salami, goats cheese and walnuts. Chicken is cheap at the moment, we got 6 free range fillets for $15. Niiiice. So have four more waiting in the freezer.
I also roasted up some zucchini and sweet tomatoes, and had a salad with lettuce, chickpeas, avocado and olives. And it looked like this:

Firstly, I just have to pimp my poll again, its just over there, top right of the screen -------->

Last night I snacked on some corn chips left over form the weekend around 8pm. Not many but a few. It was good to eat early, I am liking it. Maybe I am getting old...

Breakfast this morning was a lazy ryvita with peanut butter. Shame.
I snacked on a yogurt mid morning, which got me through til lunch, which was a salad, not unlike yesterday but looking a little less tragic:


Lee picked me up after work, we went for a knock off pint as our heads are a bit full with everything that is going on at the moment, and we ended up sharing a spinach dip too:


Now we are both full so no dinner tonight, but I guess you could call that 'snack' dinner....

So my prediction was right, we devoured the remaining ice cream last night and it was good. Nuff said!

Breakfast this morning was a ryvita with peanut butter, we ran out of grapefruit. Hardly fulfilling but somehow managed to get us through until lunch o'clock.

My lunch was chicken and salad (lettuce, tomato, pickles and olives). It was... ok I guess. Lacking in imagination, thats for sure but I am always a sucker for pickles!


Dinner was really early, Lee came to pick me up with a chicken pita in hand, so we scoffed those by the lake before doing the grocery shopping. Really good, as usual (the pita, not the grocery shopping). We might need a snack later on, but have plenty at hand.

Now, for more important things, I am posting my next challenge! The theme is Sweet Stuff, I need to get my bake back on, as I hardly ever bake. The choices are all things I have never made before, and happen to be things that I love and would love to learn to make. There was a massive list of Sweet Stuff I wanted to include on this poll but I had to limit it to things that can be transported ie in to work or to a friends house, mainly so I don't have Sweet Stuff in the house. You know what I am getting at, don't make me spell it out!

Right, back on the bandwagon! Or so we try...

Breakfast was the usual, and here is a visual for you:


Lunch was two ryvitas with hummus, tomato and avocado with some cracked pepper. Really good.


We went for a bike ride after lunch to trial our ride in to work. It took 40 minutes to get in, which isn't too bad, and have worked out the way to get home via a pub. Today is a public holiday, so pubs were closed when we were coming home, so we came home and decided to go later anyway. Which we did, and picked up our friend Heather on the way. We got to the pub just after 4 and decided we were all quite hungry so ordered food. I had a steak sandwich which came with a ridiculous amount of chips. Lee helped me eat some of them, and we left some on the plate too. Not saying I didn't stuff myself stupid first though. Sorry, no pic. But I can tell you it was pretty good!

Thats it for today. There is still some ice cream in the freezer so no doubt that will be demolished later on. Will update tomorrow. Nite yall!

Well what a weekend its been!

I will start with Friday, May 20th. After my last post I tried really hard to fight all the junk food at work but a colleague offered me one of her home made cupcakes and they were pink. I couldn't say no, so I ate one and it was absolutely delicious! Not long after I took this pic I had a massive bite, which made the cupcake a little unbalanced and it tipped over and 'frosted' my spiral notebook! Nightmare to get out, but should keep me busy in future meetings. *nom nom nom*


For dinner on Friday we had Harveys, a bit naughty but very tasty and we needed something quick on the way up to Awenda Provincial Park where our camping spot was. The traffic from Toronto heading north was horrendous, but we only actually came to a stop on the motorway once. Once we hit Barrie we were smooth sailing. Back to Harveys. They have great burgers, and Lee and I both went a Great Canadian Burger with cheese, pickles and spicy peppers. Yum yum. We love Harveys, it takes longer because they cook to order and they build it in front of you. We love that. More pickles please!

On Saturday for breakfast we had ham & bruschetta wraps with some harvarti, and a splash of garlic tabasco. I used sundried tomato tortillas and I have to say, they were damn tasty! Great way to wake up and start our day.
For lunch we had another wrap, although these were loaded with tomato, salami, pickle, salad and avocado. We rode down to the shore of Lake Huron, an awesome ride on our new bikes. The hill back up afterwards was a bloody nightmare.


In the afternoon we snacked on some corn chips and salsa, and for dinner we had hot Italian sausages with pickle relish and tomato sauce/ketchup and some onion. We absolutely love camping sausages! Our fire pit wasn't really equipped for sausage cooking, I did try to convince Lee to cook them on big sticks over the fire but we used the camp stove instead. Still really good! And LOVING the camp stove. The noise it makes when lit reminds me of Wilke camping days. I hope we all go camping together again one day, that would be awesome.


On Sunday I cooked up some eggs and baked beans, and we had that on bread (toast was a little difficult) with some ham. That and a cup of tea and we were set.
For lunch we had the wrap finale, loaded with ham, salami, avocado, salad, goats cheese (aren't we the la de dah campers?!) and of course the garlic tabasco. So glad we took that with us!

So the weather forecast said showers and thunder storms over night and all today (Monday) so we decided to forfeit our last day camping and come home in the afternoon yesterday instead. Was a good move, the storms were heinous and even though I reckon our little tent that did us so well camping through the USA last year could handle it, I don't think we could have! My cold was getting a little worse, so we thought we should try beat Monday traffic and come home instead. Before leaving we had a Tim Hortons coffee (worst in the world) and an apple fritta. Oh my god that was delicious.
We were home by just after 6pm, dead tired but happy with our efforts, so we ordered pizza, and it was delicious. Obviously the last pizza for a while though *sigh*. I do love pizza.

Will update about todays food efforts later. Will be menu planning for the week today too, so hopefully something interesting to cook up. I think I am going to get my bake on and do something with that. I want to try Mez's recipe, and I am hoping I can do the Scando ham hock this weekend. xxx

Had a few spoons of icecream last night, it was delicious, even if its dairy evilness messed with me.

Breakfast this morning was pathetic, one peanut butter ryvita. It was good though, but I should have eaten more.

Apparently its a thing at my new job where they bring donuts in on Friday. Well, several people did, and its donut heaven in here. Smells amazing.... *cries*. I managed to say no to the actual donuts, but caved and had two Tim Bits (donut holes from Tim Hortons) and they were amazing. Whoops.

Just finished my salad, which was left over from last night, topped with left over pork from last night. I am sitting at my desk trying not to spill my food, but I am so hungry the fast movements between my fork, my lunch container and my mouth are causing quite a fiasco on my desk, face and top. Sunflower seeds everywhere!

Well thats it for the blog for a few days. We leave for our trip straight after work and will have dinner on the road somewhere. Will take pics and tell yall about it when we get back on Monday.

I had a ryvita with peanut butter this morning, with a green tea instead of a coffee.

There were no snacks, so when lunch came around I was really happy that the facilities team at my new work were hosting a bbq! I had a sausage (it was really similar to a kransky, I was stoked). Had a few bites of a chicken bun later in the afternoon but left that, it was a bit naff.

For dinner I cooked up a pork fillet and made a salad, it looked like this and was pretty good:


We are now getting ready for our camping trip which starts tomorrow! So I will be off the blog for a few days but will keep tabs and do a mass post when we get back. Talk to you all then xxx

Man, that ice cream last night was the shizzle! We didn't eat very much, just a few spoons each, but it was enough.

This morning for breakfast was ryvitas with natural peanut butter and a coffee, again.

At about 11 I had a vanilla yogurt. Man, they are so small, didnt touch the sides.
My lunch was pretty much the same as yesterday, sans tomatoes because we ran out, so chucked some yellow capsicum in there instead, and some cucumber.  I also had a banana.


We went to pick up our bikes after work and the new strap for our bike rack contraption we bought from the bike store (the original one had a shredded strap which was a bit shit). It took a long time pfaffing around, but eventually made it home. It was later than we wanted it to be and still no food in the house, so once again we did something naughty, ridiculous, calorific and all that shit no one really cares about. We went to Boston Pizza and had a small thin crust wholegrain pizza each and a couple of beers. It was.... ok. Anyway.

Looking forward to camping this weekend, even if it is pissing down and really cold. Woot! Bring it on Canada!

Breakfast was two peanut butter ryvitas. We are out of grapefruit, we were meant to go today but didn't, so same with tomorrow.

Had a banana around 11, then ate  my lunch at 12. Was a great salad - lettuce, tomato, pickles, olives, chickpeas and olives:


Was starving by the time we left work so instead of grocery shopping we went for a pint and some food. I had a spicy chicken wrap and a pint, delicious! It did come with chips but Lee helped and we didn't finish, so thats good. Still, should have said no but I couldn't resist.

And not to stop a good calorie fat fest there, we stopped off on the way home for some icecream. We are now eagerly waiting for a bit of space to have some. Mmmmm.

Lets see. This morning we had grapefruit and ryvita for breakfast. We also found the leftovers from last night still sitting on the bench, so no meat parcels for dinner. Will get to that in a minute. Also, woke up to some really good news, our good friends Alli and Gerard are travelling Asia at the moment and just got engaged! Woo hoo! I wonder if it will be another destination wedding...

It was my first day of work today, which was pretty good. I didn't eat until lunch, they took me out for Thai and I had a mango chicken salad, which was nice and spicy, and I have to say, pretty tasty. No photo, the conversation was a bit forced so I thought it would be too much pulling out a camera!

No snacks this afternoon so was starving when we got home. Due to the meat parcel mix getting chucked out we ended up having left over snack platter from yesterday. I cut up some more veg, and toasted some french stick slices with brie. Mmmmmm. Brie. 

Thats it for today. Will be taking my lunch in tomorrow and will actually cook something tomorrow night. No idea what, will sort that out later. Overall a good day, lets see how tomorrow pans out.... xxx

Busy day again. Had grapefruit and a peanut butter for breakfast. The grapefruit was really pithy and bothersome. Never mind.

We had baked beans on half a slider bun for lunch, just a small snack as we had people over in the afternoon for some hockey action (Sweden vs Finland) and I put out some nibbles. I really wanted to slave in the kitchen and be creative but budget and time were not on my side, so I put this together. Still not too shabby eh?!



Gutted that the game didn't show in TSN like advertised, instead we watched Toronto win the lacrosse. Whatever!

For dinner we had meat parcels, and will have them for the next few days.

Thats it from me. Tomorrow is my first day at my new job and apparently they are taking me out for lunch. Nice eh? I will see if I can get away with taking a photo ;).

Last night a few hours after our early dinner I had a thai soup which was really good.

This morning we both had a yogurt with nuts for breakfast, we were meant to have a grapefruit but energy levels were pretty low and we really couldn't be bothered with the effort.

Had a massive day, chicken pitas for lunch and head to the pub with a friend. Ended up sharing some chicken wings in tequila and lime sauce, no photos sorry, but I can tell you they were pretty good. I am not a fan of chicken skin though. Its crazy living in the land of the chicken wing and the rib. They are pretty much staples here, and it was the third time I have had wings since moving here. I am still not entirely sold but I am no longer dead against them either.

Dinner was lazy. I think lazy is a key word of late, as the CBF levels are really high. We had take away, shame on us, I had Thai chicken noodles and a spring roll. Grocery shopping tomorrow, followed by a home viewing of the Sweden vs Finland hockey match. We are having people over so will throw together some nibbles, looking forward to spending some quality time in the kitchen.

Right, there seems to have been a bit of a problem with my blog, my previous posts didn't post, and then I was locked out for about 30 hours. So here we go playing catch up.

May 11:

Confession of snacking on May 10: Honey on bread. In the grand scheme of things, its not too bad I guess.
I had grapefruit for breakfast, with a coffee, no ryvita.
For lunch I had a ham and cheese sandwich with olives, and it was delicious. So much better than it sounds!
On Wednesday night we met up with a couple of friends who are back in town. We went a bit early to get something to eat because I was completely disorganised. My dinner was a sausage in a bun with sauerkraut. I don't know if I am alone here, but sometimes I really crave sauerkraut! And when its on a menu, Lee can safely put down $100 down knowing its a safe bet, its a sure thing. And.... It was awesome. It came with a MASSIVE side of yam frites, which were pretty good but couldn't get through them.


May 12:

Breakfast was yogurt with nuts, no coffee, no ryvita.
Lunch was some sweet chilli rice snacks, and then a bowl of asparagus and basil soup with a dollop of sour cream.



Dinner turned out to be steak, as I waited for Lee to pick me up from my interview with the Food Bank for the volunteer position at a bar, and I got the call about my new job, and I start Monday! Awesome. So we stayed there for another giant beer and a steak. My steak came with some tempura onion, a baked potato with spring onion & bacon (sour cream on the side) and some coleslaw. Sorry, no pic. For the record, I didn't eat it all, I ate half of everything, other than the steak. I mean, come on?!

May 13:

Happy Birthday Mel! I had a yogurt with nuts for breakfast. With a hazelnut coffee, niiiiiice.


Lunch was on the go, I had a ham and turkey ciabatta with lettuce and tomato. It was ok.
Dinner tonight was taco taco night. We bought a taco kit (Old El Paso, is there any other?!). It was the health wise one, and I gotta say, not as tasty as the full fat full salt full msg kind! But the garlic tabasco kicked it up a notch which was well received. Also, I have to note, the absence of cheese was noticed. We tried, but we wont be making that mistake again.


Sorry about the cramped post, disappointed I had to write the first two days twice, but aaahhh well, what are you gonna do?! We are Canadianizing quite nicely I think.

Last night I got snacky around 9pm and had a ham sandwich. I really have to curb this snacking thing, not so much the snacking part, more the time of day and what I am snacking on. Still, it was really good and totally hit the spot, hahaha!

BAU today, sans peanut butter ryvita. Went for a 4km walk, when I got back I ate a yogurt with some nuts.

Lunch was a left over rissole in a slider bun with lettuce, tomato and pickle. Delicious!

Dinner tonight was roasted chicken breast stuffed with ham, goats cheese and walnuts and a salad. Oh my gosh. Awesome. EDIT: added pic. Doesn't look like much but OMG it was good.


Also snacked on some bbq rice crackers, so set for the evening. Hoorah.

Had grapefruit and coffee for breakfast. Was meant to walk with Lee this morning as he is on a training course all week not too far from ours, about a 40 minute walk, but I had a terrible night sleep so he let me sleep in.
Had a yogurt with some nuts around 11am after I went for a short run.

Lunch was leftover pork in a sandwich with rocket, tomato & a slice of cheese. Just as good in a sandwich, I would almost say better!

Dinner was rissoles and salad, we haven't had rissoles in a while. They were really good, they had beef, mushroom and onion in them. The salad was pretty good, not as good as last night, no idea why it was almost identical. Still, really tasty stuff.

Dinner left us so stuffed last night that I even woke up feeling full and uncomfortable. I think we just ate too much yesterday in general, but I will definitely make those walnut crusted chicken fillets again, they were delicious in the slider buns but reckon they will be good in many different ways. I might try the frying method at some point to crisp them up but its good to know they are awesome without having to do that part.

Breakfast was grapefruit and a peanut butter ryvita. Nice and early for a Sunday morning. I always hate the start of a jar of natural peanut butter, so oily and disgusting. It is worth the effort of mixing it up though.

We were out and about soon after breakfast, I had a photography assignment to attend to so we did a lot of walking around parks to find the ideal place. We were still out by lunch time so picked up a grilled chicken pita on the cheap and kept going. Didn't really get the results I wanted but have enough to complete my assignment.

Dinner was lemon pepper pork loin & salad.  It was.... toothsome. I am running out of words and getting sick of delicious, scrumptious, delightful and tasty, so I had to resort to a thesaurus search to help me out on this mighty fine day.
Anyway, the salad was more than brilliant, we were both sad when it was all gone, and the pork was actually pretty good, albeit overcooked. The meat thermometer said to cook it to 170 F, but I took it out at 160 and  even that was a little overcooked. Still, it was tasty, and that salad was out of this world and the highlight of the meal. Rocket, tomato, red cabbage, olives & goats cheese with a mustard & balsamic dressing.

Today for breakfast I had a yogurt with some crushed walnuts. It was ok for a few hours but was starving by 11 so had a ryvita with peanut butter.

The plan was to make what was meant to be for dinner last night for lunch today and have a picnic. Well, the weather wasn't as permitting as we expected so we had lunch at Moose Winooskis instead, which was loads of fun as always. We both had a chicken wrap and a pint.

For dinner, well, I am pretty happy with this. I made walnut crusted chicken fillets (baked instead of fried, blitzed some walnuts in The President and threw in some breadcrumbs), made up some spicy guacamole and made burgers with red pepper slider buns and some arugula. That and a side salad of quinoa, chickpeas, zucchini and asparagus. Bloody good.

Fairly early night last night. Woke up at ridiculous o'clock thanks to the singing birds outside the window. Still, better than a gun shot or a garbage truck, right?!
Had a yogurt with some walnuts for breakfast and a cup of coffee. Still skipping along this cold so my throat is still scratchy but feeling much better.

Lee bought me a pita for lunch which was delicious as usual.

Dinner was meant to be what was meant to be for dinner last night - walnut crusted chicken breast with salad (quinoa, chickpeas & asparagus). YUMMO. Instead that is for our picnic lunch Saturday.
Instead, shame on us, we had pizza, and it was absolutely freakin amazing. Need to stop falling over face first on junk food. Loads of exercise and good healthy food this weekend.

There was no snacking last night which was good, but that doesn't mean that snacks were not wanted! Snacks were not available.

Breakfast this morning was grapefruit and a yogurt with walnuts. I am totally off ryvitas, I think I have done my dash with them for a while. Washed down with a black French vanilla coffee, breakfast was very satisfying.

For lunch today I had some steamed asparagus, fresh champagne tomatoes and a poached eggs with a sprinkle of sunflower seeds. Scrummy.



I got hungry later on though so I had a ham sandwich in the afternoon. Followed by a couple of ginger snaps. Seriously need to stock up on non wheat based snacks.

Dinner was... unexpected. Lee and I went for another long walk after work, although much longer than yesterday. We went to a cycle shop and looked at bikes, and it was really sunny so we went and had a beer in the sun. That turned into a couple of beers, and ended in a pub meal of a burger each. Well, you know what? It was really tasty, and we both had a good time. Now just to make up for it over the next few weeks, hahaha. *sigh* Never mind.

Happy May the 4th everyone. Many moons ago Vickie sent me an email with Luke Skywalker and a caption saying 'May the Fourth be With You' which I nearly fell off my wheelie chair in fits of laughter (back in the old Pacific Internet days). You know, the kind of laughter where you almost let out a bit of wee and cant stop the tears? One of those fits.
I used that image every year until now, and for some reason I cant find that email or image, its been seven or eight years and this is the first time I cant find it!  Might have to pull the 'Revenge of the Fifth' card tomorrow to make up for it. Either way, every May 4th I chuckle and remember that fit of giggles and the person who gave them to me. xx

Last night at about 9pm my belly rumbled again. I need to do something to curb this appetite as I shouldn't be eating anything at that time. Lee made me a sanga, using the whole 'sandwiches always taste better when someone else makes them' argument, which I completely agree with. And it was delicious. Sunflower and flaxseed bread with cheese, ham and tomato sauce. YUM YUM!

Woke up this morning with the commencement of a cold, damn it. I ate a yogurt with some walnuts for breakfast and had a coffee. I know, its a tiny breakfast, but so is half a grapefruit and with my scratchy throat I couldn't face the grapefruit.

Lunch today was more salad which was good. Better than yesterday.


Lee and I went for a long walk when he got home from work, its such a beautiful day we wanted to do something, and ended up getting an icecream for the return walk home. Was delicious.

Dinner tonight was meant to be cabbage rolls, and we were both really keen for them. But for reasons I should have foreseen, they were a disaster and didn't get finished. The mix was good, cabbage leaves cooked, everything was ready but I couldn't roll the bastards, I was naive and thought I could use red cabbage. They were too thick and I couldn't tuck in the sides, there was chicken mince mix everywhere.
Lesson learned, next time I will use Swiss chard instead, but the incident today put me in a really shit mood. There was nothing else to prepare without taking hours, no back up meat defrosted, so I made mini pizzas instead. I am so annoyed I could explode but kitchen failures happen, and I had one tonight.

I had a thai soup last night quite late as my stomach began to rumble. It was a chilli lime grass clear broth soup and it was delicious, even if it was a little unnecessary.

Breakfast today was the usual half a grapefruit and a coffee. Skipped the ryvita, wasn't really hungry.

Lunch was a big bowl of salad, and then a ham sandwich. Here's the salad. It was delicious but seriously didn't touch the sides, so had another bowl:


Dinner was poached salmon & salad. Pretty much the same salad as lunch just without olives and goats cheese, but this time I added a poached egg and some steamed asparagus, with some walnuts thrown on top:


After dinner we snacked on some left over ginger snaps from Lee's cheesecake making from yesterday (which apparently was a huge success, was devoured in no time and people are demanding he write them up the recipe!) and thats it for today.

Busy week even though I chucked in my temp job. Loads of study, food prep/planning, cleaning and exercise to do. In other news I applied for a volunteer job with the Food Bank coordinating a recipe book they are making for people to cook healthily on a budget, including food from emergency food hampers. I heard from them today and have an interview next week, so hopefully something will come of that, would be a great opportunity and something I really want to do.

Bright and early breakfast in the doom and gloom of what feels like London weather, we had 1/4 grapefruit each (there was only a half left) and some strawberries. Washed down with a black French vanilla coffee, delightful.

Busy day today, managed to see the tax man, have a driving lesson with Lee, do the grocery shopping, buy ingredients and a cake carrier for Lee to make and take a cheese cake in to work tomorrow, and have time for a quick pint.

I had a chicken wrap for lunch with lettuce, tomato & red cabbage. Was pretty tasty, and really filling.

Tonight we had left over lasagna, and it was still win. Also, Lee is 'required' to take a self made cheesecake in to work for tomorrow, so we have spent the last little while doing that. He has never made any kind of cake let alone a baked cheesecake so we took the opportunity to see how we would go me 'not helping' and him following instructions. I am dead proud, so I asked for him to write a blog entry for me, which you can find here: Husbandman makes cheesecake.....

It looks pretty good! Smells insane, kind of glad wont be going to town on that bad boy, I might go for a run instead.... *cries*.

May 01, 2011 - continued....

So my fantastic husbandman has been running all over town for me today while at work, scanning docs for me to send to send to my new employer and then bought me some lunch! Grilled chicken pita with olives, lettuce, tomato, onion and feta cheese. Delicious.

I had no energy or feeling for cabbage rolls, so instead I made a lazy lasagna with the left overs in the fridge and the cupboard. Celery, onion, beef, pancetta and zucchini. It was pretty much thrown together but it worked out really well. Had some wholegrain ciabatta so toasted that up too. Too full to move now.

Grocery shopping tomorrow, busy day/week ahead.

So last nights challenge left me feeling a bit disappointed. Not because of the food, I am happy with it, but just that it wasn't really a challenge. So again I open it up to you folks to suggest something for me to make.
Mez has suggested an awesome dessert that I will have a crack at in the next couple of weeks, and I still have my favourite Scando's pork knuckle in beer recipe, so might do that one next week. Anyone else got anything? Even if you have seen it on a challenge before and voted but did not win, what would you like to see?

For breakfast this morning I had half a grapefruit and some strawberries. Delicious. And a coffee in bed, although solo as Husbandman is off doing his last 12 hour shift for a month or so.

Not quite sure what the plans for lunch today (probably a sad lonely salad), but I can tell you we are having red cabbage rolls for dinner tonight, yum!
Big day again today, need to finish the menu planning, will make a few new things, and a couple of new favourites, all in line with healthier options. Have a butt load of study to do also, and have a busy week ahead.
