Back on the grapefruit this morning, which was really nice for a change, even though its my ol' trusty.
I worked from home today, Lee is back on nights and our sleeping wasn't great last night. I couldn't wake him up to drive me to work, that would just be cruel, and it was stormy so riding my bike seemed out of the question. Was quite a productive day really, although by 10am my hankering for a coffee grew so big that I had to put the coffee machine on, risking waking up Lee with the delicious aroma of roasted hazelnuts. Mmmmm. He didn't get up until lunch time, so that was nice, perfect timing for a walk together.
Lunch was left over pulled pork in a wrap, with some avocado, tomato & lettuce. Yum yum. I am amazed how the pork turned out. Honestly. That recipe is definitely a keeper, and I imagine its a lot healthier than having pulled pork out. Not sure why, but that's how I am justifying it right now :)
I had a few bites of the left over veg & goats cheese pie from the other night, this was Lee's 'lunch', it looked & smelled so damned good. And it was. He was still hungry (probably because his wife kept taking bites of his lunch) so I decided on an early dinner for myself and made spicy sweet potato soup, a recipe from my Power Foods cookbook. All I can say is, bloody fantastic!
I love this recipe, its so easy, so tasty, and really filling. Never made it before but will definitely be making it again. Squeezed a wedge of lime over the top then chucked in with some spring onion, and voila.
Lee has now gone off to work for the evening, leaving me here all by myself. *queue violins*.
